Training required in commercial catering

In addition to the general requirement for food hygiene training, commercial catering establishments are also subject to article L.233-4 of the French Rural and Maritime Fishing Code (CRPM). This article sets out the obligation for commercial catering establishments to have a member of staff who has undergone specific training in food hygiene:
- This obligation applies to establishments in the traditional catering, cafeteria and other self-service and fast-food sectors1.
- The training must be provided by a training organisation registered with the regional prefect. The list of training organisations registered in a region can be consulted on the website of the Regional Directorate for Food, Agriculture and Forestry.
People with at least three years' professional experience in a food business as a manager or operator are deemed to have met this training requirement.
A person holding a diploma or professional qualification listed in the Order of 25 November 2011 and issued after 1 January 2006 is deemed to have met this training requirement. Where necessary, it is the responsibility of the person concerned to provide proof of this experience in the event of an official inspection.
The regulations do not set a time limit for the validity of this training, or an obligation to renew it.
